Joten suosittelen ehdottomasti kokeilemaan!

Astetta parempi lihapullaspagetti (6 annosta)

LIHAPULLAT

juustoraastetta

Pilko valkosipulit pieniksi. Kuullota niitä öljyssä kunnes ovat hieman ruskistuneet. Lisää pannulle kuoritut tomaatit liemineen sekä mausteet. Anna hautua kannen alla n. 25 minuuttia. Keitä paista. Valuta vesi pois ja sekoita kastike pastan joukkoon.

Kaada spagetti tomaattikastikkeineen uuninkestävään astiaan ja kääntele joukkoon lihapullat. Ripottele päälle juustoraastetta ja paista 175-asteisessa uunissa n. 20 minuuttia tai kunnes juusto on sulanut mukavasti.

I recently made this baked spaghetti and meatballs and it was a huge hit in our family. Definitely worth its own blog post. According to husband this dish made its way to his top ten and my son praised this several times. I hope you try this out!

Baked spaghetti and meatballs (6 servings)

MEATBALLS:

500g ground beef
2 garlic cloves
5 sundried tomatoes
3tbsp freshly grated parmesan
2tbsp fresh parsley
salt
black pepper
2 eggs

Peal and mince the garlic. Chop the sundried tomatoes into small pieces. Mix together the ground beef, minced garlic and the sundried tomatoes. Season with parmesan, parsley, salt and pepper. Finally add the eggs. Gently roll between your hands to form smallish meatballs and bake in 225C (437F) oven for 10 minutes.

TOMATO SAUCE & SPAGHETTI

4 garlic cloves
3/4dl olive oil
2 cans (a 400g) peeled tomatoes
2tbsp oregano
1tsp sugar
salt
black pepper
400g spaghetti

grated cheese

Mince the garlic and saute in olive oil until fragrant. Add tomatoes and spices to the pan and let the sauce simmer under a lid for 25 minutes. Cook and drain the pasta combine with the sauce.

Pour the spaghetti and sauce into an oven safe dish and add the meatballs. Sprinkle with grated cheese and cook in 175C (350F) oven for 20 minutes or until the cheese has melted.

Tuorejuusto-brownie (16 palaa)

Brownie-pohja:
100g voita
300g tummaa suklaata
200g sokeria
2 isoa munaa
0,5tl suolaa
2tl vaniljauutetta (tai -sokeria)
1dl maustamatonta jogurttia
100g jauhoja

Tuorejuustokerros:
225g maustamatonta tuorejuustoa (huoneenlämpöisenä)
1 iso muna
0,75dl sokeria
2rkl maustamatonta jogurttia
2tl vaniljauutetta (tai -sokeria)

Lämmitä uuni 165C ja vuoraa 20x20cm vuoka leivinpaperilla.

Sulata voi ja 200g suklaasta kattilassa tai mikrossa. Lisää joukkoon sokeri, munat, suola, vaniljauute ja maustamaton jogurtti. Rouhi loppu suklaa ja lisää joukkoon. Kaada 2/3 brownie-taikinasta vuokaan.

We call this treat the due date cake. It's outrageous enough to numb the feeling of exhaustion you have after being pregnant for 40 weeks and baby showing no signs of ending the nine month long misery. Unfortunately me and my sisters know quite a lot about it.

Cream cheese brownie (makes 16)

Brownie base:
100g butter
300g dark chocolate
200g sugar
2 large eggs
0,5tl salt
2tsp vanilla extract (or vanilla sugar)
1dl plain yogurt
100g flour

Cream cheese layer:
225g cream cheese (at room temperature)
1 large egg
0,75dl sugar
2tbsp plain yogurt
2tsp vanilla extract (or vanilla sugar)

Preheat oven to 165C (325F). Line an 8x8 inch (20x20cm) pan with parchment paper.

Melt the butter and 200g of dark chocolate in a microwave or in a pan. Add the sugar, eggs, salt, vanilla extract and plain yogurt. Chop the remaining chocolate and add to the dough. Spread 2/3 of the brownie dough into the pan.

Mix together the cream cheese, egg, sugar, yogurt and vanilla. Pour the cream cheese mixture on top of the brownie dough. Top with the remaining brownie dough. Swirl with a knife to create a marble effect.

Bake for approximately 50-60 minutes (the cake should still be a bit wobbly in the centre). Let the cake cool completely and then remove from pan. Cut in 16 pieces. I prefer this to sit in the fridge for quite a while before enjoying it with a tall glass of cold milk!

.. Kuvia käsitellessäni huomasin, että toi mitä käytin on muuten oreganoa eikä timjamia:D Eli hyvin toimi oreganollakin, mutta ens kerralla pistän kyllä ihan ohjeen mukaan timjamia!

Sipuli-luumupiirakka (8-10 annosta)

TAIKINA
3,5dl spelttijauhoja
1tl leivinjauhetta
0,5tl suolaa
150g voita
0,5dl turkkilaista jogurttia

TÄYTE:
500g sipulia
2rkl voita
2rkl oliiviöljyä
400g luumuja
0,25dl juoksevaa hunajaa
1-2rkl tuoretta timjamia silputtuna
1tl suolaa
0,25tl mustapippuria myllystä
2dl kuohukermaa
2 munaa
150g vahvaa goudaa raastettuna

Valmista pohja.

Pilko sipuli ohuiksi lohkoiksi.

I usually never try out anything "weird". I can test a new brownie or cookie recipe anytime, but rarely do I make anything exotic or wild combinations. Yesterday I received the newest "Maku" food magazine and there was this one recipe that caught my eye and I just really wanted to try it out. An onion plum pie! Onion and plum. Okay...

This one is sure to divide opinions but it definitely convinced me so I want to share it with you. I was so pleased with it I even had the courage to serve it in a get-together last night and there wasn't a single piece left at the end of the evening. So if you're in the mood for something different, I can sincerely recommend this one!

.. As I was editing the photos I noticed that I accidentally used oregano instead of thyme:D It was good with oregano as well, but next time thyme it is.

Onion plum pie (8-10 servings)

CRUST:
3,5dl spelt flour
1tsp baking powder
0,5tsp salt
150g butter
0,5dl Turkish yogurt

FILLING:
500g yellow onions
2tbsp butter
2tbsp olive oil
400g plums
0,25dl runny honey
1-2tbsp fresh thyme chopped
1tsp salt
0,25tsp freshly ground black pepper
2dl double cream
2 eggs
150g strong gouda grated

Prepare the crust. Combine the dry ingredients and cut in the butter until mixture resembles coarse crumbs. Stir in the Turkish yoghurt until mixture forms a ball. Wrap the dough ball in cling wrap and let it rest in the fridge while you prepare the filling.

Cut the onions in thin slices. Heat the butter and olive oil on a pan and saute the onions until fragrant. Rinse the plums and remove the stones. Cube the plums and toss them into the pan with the onions. Saute for two minutes and add the honey. Let the onions and plums simmer at medium heat under a lid for about 10 minutes, until the onions and plums have softened. Season thyme, salt and pepper.

Roll out the dough onto a 25cm pie form and press it onto the bottom and sides of the dish. Spread the filling onto the crust. Mix together the eggs, double cream and 1/3 of the grated gouda and pour the mixture over the filling. Sprinkle with the remaining cheese.

Bake the pie in 200C (392F) oven for approximately 30 minutes, until the filling has set and has a nice golden brown colour. Let the pie rest for a while before serving. You can also make this beforehand and let it wait in the fridge.

Sunnuntaipata (5-7 annosta)

800g porsaanlihasuikaleita
4 porkkanaa
8-10 keskikokoista perunaa
pala lanttua
2 sipulia
2prk (a 450g) Uncle Ben's Sweet & Sour kastiketta
5dl vettä
1 lihaliemikuutio

Ruskista possusuikaleet kevyesti pannulla ja kaada syvän (ja kannellisen) uunivuoan pohjalle. Paloittele porkkanat, perunat, lanttu ja sipulit kaikki suht isoiksi paloiksi ja lado vuokaan lihojen päälle.

Kuumenna pannulla vesi kiehuvaksi ja lisää liemikuutio. Kaada joukkoon Uncle Ben's kastikkeet ja anna kuumentua hetki. Kaada seos uunivuokaan.

My Mom has made this classic stew for as long as I can remember. It's called Sunday stew because Mom usually put it in the oven before we left to church on Sundays and when we returned there was this perfectly steaming and delicious lunch waiting for us hungry people. This was a very popular dish especially on fast Sundays because you could just dig in right when you got home from church!

Anyway, you don't need to go to church in order to make this dish;) It takes a long time in the oven, which is why it's handy to do in the morning and then by lunch time you'll have food ready.

Sunday stew (5-7 servings)

800g pork fillet strips
4 carrots
8-10 medium size potatoes
piece of rutabaga
2 onions
2 jars (a 450g) Uncle Ben's Sweet & Sour sauce
5dl beef stock

Cook the pork strips lightly on a pan and place in a deep oven safe pot (preferably with a lid). Cut the veggies in fairly large place and place over the pork.

Bring the beef stock to boil and add the Sweet & Sour sauce. Pour the liquid into the pot. It should be just enough to cover all the ingredients.

Put on the lid and cook in 160C (320F) oven for 2 hours. Remove the lid and cook for 1,5 hours more. If you're pot is really full it might be useful to place a baking tray at the bottom of the oven in case of leaks.

Serve with lingonberry jam and cottage cheese. The stew gets even better as days go by!

Tätä on helppo varioida vaihtamalla raparperi esim. marjatäytteeseen. Kermaviilitäytettä on vähän muokattu alkuperäisestä ohjeesta.

Raparperipiirakka (10 annosta ..tai miten sen nyt ottaa;)

150g pehmeää voita
1dl sokeria
1 muna
3dl jauhoja
1tl leivinjauhetta

1pss (500g) raparperia
sokeria (itse laitoin n. 60g)

200g kermaviiliä
150g maustamatonta jogurttia
2 munaa
60g sokeria

Vatkaa pehmeä voi ja sokeri. Lisää kananmuna vatkaten. Sekoita keskenään jauhot ja leivinjauhe ja lisää taikinaan. Painele taikina 25cm piirakkavuoan pohjalle ja reunoille.

Kuori ja paloittele raparperit kattilaan ja kaada joukkoon haluamasi määrä sokeria. Kuumenna miedolla lämmöllä, kunnes raparperit pehmenevät ja mössööntyvät hieman. Kaada raparperit piirakkapohjan päälle.

Sekoita yhteen kermaviili, maustamaton jogurtti, munat ja sokeri ja kaada piirakan päälle. Paista 200-asteisessa uunissa 25-30 minuuttia. Anna jäähtyä kokonaan ennen syömistä, jotta täyte jämäköityy. Tarjoile esim. vaniljajäätelön tai -kastikkeen kera.

There's still time to make this summer classic. Rhubarb pie that is. My eldest is starting preschool tomorrow (may I just cry a bit here??) and I wanted to bake something for him as it is his last day of freedom. And he chose this one. Good taste he has that's for sure!

My dear aunt Marja has given me this recipe and it is my go-to recipe for pretty much any pie, since you can easily change the filling for berries or whatever you like.

Rhubarb pie (10 servings ..oh well, let's say 8;)

150g soft butter
1dl sugar
1 egg
3dl flour
1tsp baking powder

1 bag (500g) rhubarb
sugar (I used about 60g)

200g sour cream (the Nordic kind)
150g plain yoghurt
2 eggs
60g sugar

Beat the soft butter and sugar and add the egg. Mix together the flour and baking powder and add them into the butter mixture. Place the dough onto a 25cm pie dish and press it into the bottom and sides of the dish.

Peel and cut the rhubarb and place them in a pot with the sugar. Cook the rhubarb on medium heat until it softens and becomes a bit mushy (is that a word?). Spread the softened rhubarb on the pie dough.

Mix together the sour cream, plain yoghurt, eggs and sugar and pour the mixture over the pie.

Bake in 200C (392F) oven for 25-30 minutes. Let the pie cool completely in order for the filling to set. Serve with vanilla ice cream or vanilla sauce.

Tää on just sellasta täydellistä länsimaalaistunutta thai-ruokaa. Varoituksen sananen, tää menee kaikki kerralla.

Cashew-kana (4 annosta)

500g kanan rintafileitä paloiteltuna
puolikas kevätsipulinippu
1 sipuli
1 punainen paprika
1 porkkana
3 valkosipulinkynttä
1rkl inkivääriä raastettuna
1 punainen chili
2 kourallista cashew-pähkinöitä

Kastike:
1rkl fariinisokeria
2rkl kalakastiketta
2rkl osterikastiketta
2rkl sweet chili-kastiketta
0,5-1dl kasvisfondia tai kasvislientä

Pilko kaikki valmiiksi.

This is just perfect mainstream Western Thai-food. Be warned, this will be gone in no time.

Cashew chicken (4 servings)

500g chicken breast cut in cubes
1/2 bundle of spring onion
1 onion
1 red pepper
1 carrot
3 cloves of garlic
1tbsp grated ginger
1 red chili
2 handfuls of cashew nuts

Sauce:
1tbsp brown sugar
2tbsp fish sauce
2tbsp oyster sauce
2tbsp sweet chili sauce
0,5-1dl vegetable stock

Cut all the ingredients so you'll have everything ready. Heat up some sesame or nut oil in a wok pan and add in the cashew nuts and chilis. Cook until cashew nuts have nice brown color and move aside.

Cook the chicken. Add red pepper, onion and carrot.

Prepare the sauce by combining everything. When the vegetables have softened add the sauce. Add garlic, spring onion and finally cashew nuts and chili. Serve hot, with or without rice.

Mustikkasato on parhaimmillaan.

Mustikkapiirakka (pellillinen)

2,5dl kevytmaitoa
25g tuorehiivaa
0,75dl sokeria
0,5tl suolaa
1tl kaardemummaa
1 muna
7-8dl vehnäjauhoja
75g pehmeää voita

1,5l mustikoita
1dl sokeria
2rkl perunajauhoja

Voitele reunat kananmunalla.

Murskaa muutama desi mustikoita kevyesti ja sekoita joukkoon pari rkl sokeria ja perunajauhot. Levitä murska taikinalevylle. Levitä päälle loput mustikat ja paista 200-asteisessa uunissa n. 20-25 minuuttia.

Ripottele kuuman piirakan päälle loput sokerit. Jemmaa itsellesi pala, koska tämä katoaa äkkiä.

It's the best blueberry season here in Finland. I ain't much of a berry picker but I'll always get some in hopes of a delicious blueberry pie. And let's face it, it is quite cool to be able to just walk into the woods and pick as much as you like and then bake a pie.

There's some debate about whether blueberry pie is best made with shortcrust pastry or sweet yeast dough but I personally like the latter one more. It's just so perfectly simple yet delicious but not too sweet.

Blueberry pie (1 baking tray)

2,5dl semi-skimmed milk
25g fresh yeast
0,75dl sugar
0,5tsp salt
1tsp cardamom
1 egg
7-8dl flour
75g soft butter

1,5l blueberries
1dl sugar
2tbsp potato flour

Dissolve the yeast in lukewarm milk. Add the sugar, salt, cardamom and half of the egg (save the other half for later) and mix well. Knead the flour into the liquid and finally add the soft butter. Let the dough rise for 30 minutes under a cloth.

Roll the dough on a parchment paper so that the dough spreads over the edges of the paper a bit. Place the parchment paper and the dough onto a baking sheet and press the edges neatly. Brush the edges with the remaining egg.

Crush a few handfuls of blueberries, mix with the potato flour and couple of tablespoons of sugar and spread onto the dough. Pour the rest of the blueberries on top of the dough and bake for 20-25 minutes in 200C (392F) oven.

Sprinkle the rest of the sugar over the hot pie. Stash a piece for later, this baby will be gone before you know it.
