Macaronit ovat tiettävästi yksi haastavimmista leivonnaisista valmistaa. Ammattilaisetkaan eivät aina siinä onnistu ja paljon riippuu tähtien asennosta ja yleisestä tuurista. Olen testannut muutamaa ohjetta, ja tällä onnistunut parhaiten ja myös useimmiten, siispä uskallan sen jakaa. Kannattaa rohkeasti kokeilla!
Olen kirjoittanut reseptin alle muutaman hyvän vinkin, joilla välttää pahimmat sudenkuopat. Kannattaa lukea ne ennen kuin alat leipomaan!

3 valkuaista (huoneenlämpöistä)
ripaus suolaa
50g sokeria
120g mantelijauhetta
200g tomusokeria
elintarvikeväriä
100g Fazerin sinistä
50g tuorejuustoa
Siivilöi tomusokeri ja mantelijauhe ja heitä siivilöitymättömät mantelinmurut pois. Sekoita jauheet keskenään huolellisesti, ja siivilöi vielä uudestaan.
Vispaa huoneenlämpöisiä valkuaisia muutama minuutti. Lisää ripaus suolaa ja sokeri vähitellen ja jatka vispaamista yhteensä 8-10 minuuttia, kunnes vaahto on kovaa ja kiiltävää. Lisää elintarvikeväri ja vispaa kunnes väri on levittynyt tasaisesti.
Lisää valkuaisvaahtoon tomusokeri-mantelijauheseos ja sekoita esim. kuminuolijalla (älä missään nimessä enää vispaa), kunnes seos on sopivan juoksevaa. Olen todennut, että 70-80 sekoitusta on aika passeli, mutta kannattaa katsoa esim. Youtubesta videoita siitä, miltä seoksen kuuluu näyttää ennen pursotusta, sillä se on kaikista olennaisinta macaronien onnistumisen kannalta.
Pursota leivinpaperilla vuoratuille pelleille 48 vaahtonappia, halkaisijaltaan n. 2,5cm. Kopauta peltejä pöytään muutaman kerran, jotta turha ilma lähtee pois. Anna nokareiden levätä 20 minuuttia.
Paista macaroneja 20 minuuttia 150-asteisessa uunissa, vain yksi pelti kerrallaan.
Anna macaronien jäähtyä täysin ja tee sitten täyte. Sulata suklaa ja anna sen jäähtyä. Lisää joukkoon huoneenlämpöinen tuorejuusto ja sekoita tasaiseksi. Suklaan on tärkeää antaa jäähtyä, muuten seos juoksettuu siinä vaihteessa, kun lisäät tuorejuuston. Levitä täytettä yhdelle macaron-puolikkaalle ja paina hellästi päälle toinen puolikas.
Välttääksesi sudenkuopat:
1. Siivilöi ihan oikeasti tomusokeri ja mantelijauho kahteen kertaan.
2. Laita vaahdon joukkoon riittävästi elintarvikeväriä, koska väri haalenee reilusti paistovaiheessa. Esim. jos haluat vaaleanpunaisia macaroneja, vaahdon tulee olla ihan marjapuuron väristä, jotta väri säilyy.
3. Kaikkein kriittisin vaihe on tomusokeri-mantelijauhoseoksen lisääminen valkuaisvaahtoon. Jos sekoittaa liian vähän, macaronit halkeilevat paistettaessa. Jos sekoittaa liikaa, macaronit leviävät ja jäävät littanoiksi.
4. Anna macaronien paistua koko 20 minuuttia, vaikka ne näyttäisivät valmiilta, koska muuten leivokset eivät lähde hajoamatta irti leivinpaperista.
5. Ei kannata masentua jos ei onnistu ekalla kerralla:)
It's a known fact that making beautiful French macarons is quite the challenge. Even professionals have hard time with it and so much depends on pure luck. I've tested couple of recipes and I find this the best I've tried. With this recipe I've succeeded several times, so I dare to share it. Don't hesitate to try!

French macarons (makes 24 complete macarons)
3 egg whites at room temperature
pinch of salt
50g white sugar
120g almond flour
200g confectioners sugar
food coloring
100g milk chocolate
50g cream cheese
Sift almond flour and powdered sugar. Toss away the remaining larger lumps of almond pieces. Mix the almond flour and powdered together and sift one more time to get rid of any possible lumps.
Beat egg whites until foamy, then add salt and white sugar gradually and beat for 8-10 minutes until stiff foam peaks form. Then add the food coloring and beat until the color has spread evenly.
Fold flour-sugar mixture into the egg white mixture. Mix with a spatula (do not whisk anymore!), until the mixture is just right (not too runny and not too stiff). I've come to see that 70-80 turns of spatula is about the right amount. But it's best to check out a few Youtube videos regarding macarons so you'll actually see the right consistency, because the right consistency is the most essential thing if you want to nail these.
Transfer batter to a pastry bag and pipe out 48 pieces of 1 inch rounds on a baking sheet lined with parchment paper. Tap the pans hard a few times to release the air bubbles. Let the macarons sit out for 20 minutes.
Bake macarons for 20 minutes in a 150 degree oven. Bake one tray at a time.
Let the macarons cool completely and then prepare the filling. Melt the chocolate and let it cool. Mix with cream cheese until smooth. It's important to let the chocolate cool, otherwise it will curdle as you add the cream cheese. Spread a small mound of filling on one cookie shell and carefully top with another.
Troubleshooting tips:
1. Be sure to actually sift the almond flour and confectioners sugar twice.
2. Add enough food coloring to the egg white mixture, because the color will fade a lot when baking. For example if you want you're macarons to be light pink, the egg white mixture needs to be very deep pink.
3. The most critical step is adding the flour-sugar mixture into the egg white mixture. If you under mix the shells will crack when baking. If you over mix the shells will be flat.
4. Do not under bake, even if they look done. Otherwise they will stick to the parchment paper.
5. Don't feel discouraged even if you don't succeed the first time:)
