Saaristolaisleipä on erinomainen jouluherkku. Se on helppo ja parempikin valmistaa hyvissä ajoin ennen tarjoilua, sillä maku vain paranee ja syvenee päivien kuluessa. Jouluaattoa varten teen saaristolaisleivän valmiiksi pakkaseen, niin on yksi huoli aaton ruokavalmisteluista eliminoitu.
Saaristolaisleipä on myös erinomainen lahja tai tuliainen. Olen jo monena vuotena tehnyt opettajille ja päiväkotitädeille leivät syyskauden päätteeksi. Tästä reseptistä tulee sopivasti kolme leipää, ja lahjaksi vietävät leivät kannattaa tehdä suoraan kertakäyttöisiin pahvivuokiin, niin ne on helppo paketoida sellaisenaan.
Ja ei saaristolaisleivästä nauttimista kannata toki joulun aikaan rajoittaa, meillä tätä syödään ympäri vuoden ja varsinkin juhannuksena!
Saaristolaisleipä (3 leipää)
1l piimää
100g tuorehiivaa
3dl tummaa siirappia
3dl kaljamaltaita
3dl vehnäleseitä
3dl ruisjauhoja
1rkl suolaa
10dl vehnäjauhoja
1dl auringonkukansiemeniä
3kpl leipävuokia (vetoisuudeltaan 1l)
Voiteluun:
1,5dl vettä
0,5dl tummaa siirappia
Liuota hiiva lämpimään piimään ja lisää muut ainekset. Sekoita, mutta älä vaivaa. Jaa taikina tasaisesti vuokaan ja kohota liinalla peitettynä vedottomassa paikassa kaksi tuntia.
Paista leipiä 170-asteisessa uunissa, kunnes leipien pinta alkaa tummua. Vähennä lämpöä 160 asteeseen, voitele leivät vesi-siirappiseoksella ja peitä foliolla. Paista leipiä kokonaisuudessaan 2,5-3 tuntia.
Tarjoile esimerkiksi lohimoussen, katkarapuröran tai smetana-punasipuli-mäti-combon kera!
Finnish Archipegalo bread is an excellent Christmas treat. It's easy to make and it's best enjoyed after a few days since making because the taste deepens within time. I usually make the bread well in advance before Christmas Eve and freeze it, so that I have one less food item to worry about.
This bread is also an excellent gift. For many years it has been my go-to gift for school and kindergarten teachers at the end of the year. This recipe makes three breads and it's worth baking them in a disposable dish so that you don't have to remove the tin before wrapping the bread in cellophane.
And make yourself a favour and do not limit this treat to Christmas time only. It's a regular at our Midsummer table too!
Finnish Archipegalo bread (3 loaves)
1l buttermilk
100g instant yeast
3dl dark syrup
3dl dark rye malt
3dl wheat bran
3dl rye flour
1tbsp salt
10dl flour
1dl sunflower seeds
3 disposable bread tins
1,5dl water
0,5dl dark syrup
Dissolve the yeast in warm buttermilk. Add rest of ingredients and mix well, but do not knead. Divide the dough evenly into bread tins and let them rise under a cloth for two hours.
Bake the loaves in 170C oven, until the surface of the loaves starts to darken. Decrease the oven temperature to 160C and brush the loaves with the water-syrup mixture and cover with foil. Bake the loaves for a total of 2,5-3 hours.
Serve with for example salmon mousse, shrimp röra or creme fraiche, red onion and salmon roe!
