Perunaleivoksella on melko erityinen asema meidän perheessä, lapsuudenperheessä siis.

There was this one specific treat in my childhood (don't get me wrong, my childhood was filled with treats); the direct translation would be "potato cake". And not just any potato cake, but the one from our local bakery. Despite it's name the cake doesn't contain potato at all. It's a rich chocolate bomb that gives more meaning to your life. The cake is very much encouraged to be eaten with a cold glass of milk, obviously.

I spent one summer working at this specific bakery and had the chance to actually make these beauties. One wouldn't guess that the bombs are actually made of the leftovers of other cakes. Add some cocoa, raspberry jam and rum essence, dip the bombs in melted chocolate and voila, the masterpiece is ready to be enjoyed. What could be better in life than a chocolaty (is that a word?) ball with chocolate icing covered in chocolate sprinkles?

This of course is not the original recipe, but it comes quite close. Best one I've tried.

Choco bombs (20 small cakes)

2 eggs (at room temperature)
1dl sugar
0,5dl plain flour
0,5dl potato flour

100g butter
125g dark chocolate
1dl icing sugar
0,5dl cocoa powder
0,5dl raspberry jam
1tbsp rum essence

125g dark chocolate
chocolate sprinkles

Prepare the cake batter by whisking the eggs and sugar until foamy. Add the plain flour and potato flour into the batter through a sieve and mix carefully. Spread the batter on a baking tray covered with parchment paper (the batter won't be enough to cover the whole tray so don't even bother to try) and bake in 225C/435F oven for 5-6 minutes. Let the cake cool on a parchment paper.

Melt the butter and chocolate. Grind the cake in a food mixer. Add the butter, chocolate, icing sugar, cocoa, raspberry jam and rum essence and give it a good mix. Let the dough cool in the fridge.

Shape the dough into little balls and let them stand in the freezer while you prepare the icing.

Melt the remaining chocolate and dip the balls in it and garnish with chocolate sprinkles (be fast or be dead.. or something, however the expression goes). Store the choco bombs in the fridge.

Chili (4-6 annosta)

400g jauhelihaa
1tlk tomaattimurskaa
1tlk valkoisia papuja tomaattikastikkeessa
1tlk kidneypapuja
lihaliemikuutio
chilijauhetta

Paista jauheliha pannulla kypsäksi. Lisää joukkoon tomaattimurska, pavut ja lihaliemikuutio ja mausta chilijauheella. Anna hautua kannen alla 5 minuuttia. Tarjoile esim. raejuuston ja raksujen kanssa. Voilà!

There's always need for those recipes that come together in less than 10 minutes. This is an important recipe from my childhood home that Mom still serves every now and then and I make it for my own children. This dish doesn't require any chopping or meal prep. You won't win any fresh produce trophy with this one but hey, it's good food! One big plus is that this is suitable for our youngest regardless of the many allergies (milk, egg, wheat..) he has.

There are endless ways to modify this recipe. This time I added some onion and corn and would've added green pepper had I found one. But usually I just follow the original recipe.

Chili (4-6 servings)

400g ground beef
1 can (400g) crushed tomatoes
1 can (400g) white beans in tomato sauce
1 can (400g) kidney beans
1 beef stock cube
chili powder

Cook the ground beef on a pan and add the crushed tomatoes, beans and beef stock cube. Season with chili powder. Serve with for example cottage cheese and party snack mix.

Pursota leivinpaperilla vuoratuille pelleille 48 vaahtonappia, halkaisijaltaan n. 2,5cm. Kopauta peltejä pöytään muutaman kerran, jotta turha ilma lähtee pois. Anna nokareiden levätä 20 minuuttia.

Paista macaroneja 20 minuuttia 150-asteisessa uunissa, vain yksi pelti kerrallaan.

Anna macaronien jäähtyä täysin ja tee sitten täyte. Sulata suklaa ja anna sen jäähtyä. Lisää joukkoon huoneenlämpöinen tuorejuusto ja sekoita tasaiseksi. Suklaan on tärkeää antaa jäähtyä, muuten seos juoksettuu siinä vaihteessa, kun lisäät tuorejuuston. Levitä täytettä yhdelle macaron-puolikkaalle ja paina hellästi päälle toinen puolikas.

Välttääksesi sudenkuopat:

1. Siivilöi ihan oikeasti tomusokeri ja mantelijauho kahteen kertaan.
2. Laita vaahdon joukkoon riittävästi elintarvikeväriä, koska väri haalenee reilusti paistovaiheessa. Esim. jos haluat vaaleanpunaisia macaroneja, vaahdon tulee olla ihan marjapuuron väristä, jotta väri säilyy.
3. Kaikkein kriittisin vaihe on tomusokeri-mantelijauhoseoksen lisääminen valkuaisvaahtoon.

It's a known fact that making beautiful French macarons is quite the challenge. Even professionals have hard time with it and so much depends on pure luck. I've tested couple of recipes and I find this the best I've tried. With this recipe I've succeeded several times, so I dare to share it. Don't hesitate to try!

I wrote a few troubleshooting tips at the end of the recipe and you might want to read them before starting!

French macarons (makes 24 complete macarons)

3 egg whites at room temperature
pinch of salt
50g white sugar
120g almond flour
200g confectioners sugar
food coloring
100g milk chocolate
50g cream cheese

Sift almond flour and powdered sugar. Toss away the remaining larger lumps of almond pieces. Mix the almond flour and powdered together and sift one more time to get rid of any possible lumps.

Beat egg whites until foamy, then add salt and white sugar gradually and beat for 8-10 minutes until stiff foam peaks form. Then add the food coloring and beat until the color has spread evenly.

Fold flour-sugar mixture into the egg white mixture. Mix with a spatula (do not whisk anymore!), until the mixture is just right (not too runny and not too stiff). I've come to see that 70-80 turns of spatula is about the right amount. But it's best to check out a few Youtube videos regarding macarons so you'll actually see the right consistency, because the right consistency is the most essential thing if you want to nail these.

Transfer batter to a pastry bag and pipe out 48 pieces of 1 inch rounds on a baking sheet lined with parchment paper. Tap the pans hard a few times to release the air bubbles. Let the macarons sit out for 20 minutes.

Bake macarons for 20 minutes in a 150 degree oven. Bake one tray at a time.

Let the macarons cool completely and then prepare the filling. Melt the chocolate and let it cool. Mix with cream cheese until smooth. It's important to let the chocolate cool, otherwise it will curdle as you add the cream cheese. Spread a small mound of filling on one cookie shell and carefully top with another.

Troubleshooting tips:

1. Be sure to actually sift the almond flour and confectioners sugar twice.
2. Add enough food coloring to the egg white mixture, because the color will fade a lot when baking. For example if you want you're macarons to be light pink, the egg white mixture needs to be very deep pink.
3. The most critical step is adding the flour-sugar mixture into the egg white mixture. If you under mix the shells will crack when baking. If you over mix the shells will be flat.
4. Do not under bake, even if they look done. Otherwise they will stick to the parchment paper.
5. Don't feel discouraged even if you don't succeed the first time:)

Välillä on hyvä palata perusasioiden äärelle. Kuten pullataikinan.

Korvapuustit (n. 32kpl)

Taikina:
5dl kevytmaitoa
50g hiivaa
1 kananmuna
1dl sokeria
1rkl kaardemummaa
1,5tl suolaa
n. 900g (14dl) vehnäjauhoja
150g pehmeää voita

Täyte:
100g voita
1dl sokeria
2rkl kanelia

Voiteluun:
kananmunaa

Pinnalle:
raesokeria

Anna taikinan kohota vedottomassa paikassa liinan alla 20 minuuttia.

Jaa taikina kahteen osaan. Kauli taikinapala n. 30x50cm suuruiseksi suorakulmioksi.

Leivo toinen taikinapala samoin. Kohota hyvin liinan alla.

Voitele korvapuustit kananmunalla ja ripottele päälle raesokeria. Paista 225 asteessa 8-10 minuuttia.

Sometimes you just want to go back to basics. Like "pulla", which is a very traditional Finnish treat, and "korvapuustit" is pulla taken to the next level, kind of like cinnamon rolls. Baking these lovelies always makes me happy. I like to keep them quite traditional, but sometimes I go crazy and use brown sugar instead of regular and even sprinkle some almond powder on the dough. It really gives a nice nutty flavour.

One of the best things about baking korvapuustit is the smell! I always leave the house for a while and come back so that I'm able to sense the lovely smell better:D

Finnish cinnamon rolls (makes 32)

Dough:
5dl semi-skimmed milk
50g yeast
1 egg
1dl sugar
1tbsp cardamom
1,5tsp salt
n. 900g (14dl) flour
150g soft butter

Filling:
100g butter
1dl sugar
2tbsp cinnamon

egg for brushing
pearl sugar for decorating

Dissolve the yeast in lukewarm milk. Add the egg, sugar, cardamom and salt. Gradually mix in the flour and knead well. Finally add the soft butter and knead until the dough comes off the sides of the bowl and doesn't stick to your fingers.  Let the dough rise under a cloth for 20 minutes.

Divide the dough in two. Roll out the first portion of dough into a 30x50cm rectangle. Spread half of the butter, sugar and cinnamon evenly on top of the dough.

Roll the dough into a tight tube shaped roll steam side facing down. Cut in 16 triangle shaped pieces. Place the pieces on the table so that the more narrow side is facing up and press with your fingers so that the cutting surfaces now face the ceiling. Bake the other portion of dough the same way. Let the cinnamon rolls rise under cloth for at least 20 minutes.

Brush the cinnamon rolls with egg and sprinkle with pearl sugar. Cook in 225C (435F) oven for 8-10 minutes.

Joten suosittelen ehdottomasti kokeilemaan!

Astetta parempi lihapullaspagetti (6 annosta)

LIHAPULLAT

500g jauhelihaa
2 valkosipulinkynttä
5 aurinkokuivattua tomaattia
3rkl vastaraastettua parmesaania

2 munaa

Kuori ja hienonna valkosipulit. Leikkaa aurinkokuivatut tomaatit pieniksi paloiksi. Sekoita sipulisilppu ja tomaattipalat jauhelihan joukkoon. Mausta parmesaanilla, hienonnetulla persiljalla, suolalla ja pippurilla. Kääntele munat massaan. Pyörittele taikinasta pieniä pullia ja paista 225-asteisessa uunissa n. 10 minuuttia.

TOMAATTIKASTIKE & SPAGETTI

4 valkosipulinkynttä
3/4dl oliiviöljyä
2tkl (a 400g) kuorittuja tomaatteja
2rkl oreganoa
1tl sokeria
suolaa
mustapippuria
400g spagettia

juustoraastetta

Pilko valkosipulit pieniksi. Kuullota niitä öljyssä kunnes ovat hieman ruskistuneet. Lisää pannulle kuoritut tomaatit liemineen sekä mausteet. Anna hautua kannen alla n. 25 minuuttia. Keitä paista. Valuta vesi pois ja sekoita kastike pastan joukkoon.

Kaada spagetti tomaattikastikkeineen uuninkestävään astiaan ja kääntele joukkoon lihapullat. Ripottele päälle juustoraastetta ja paista 175-asteisessa uunissa n. 20 minuuttia tai kunnes juusto on sulanut mukavasti.

I recently made this baked spaghetti and meatballs and it was a huge hit in our family. Definitely worth its own blog post. According to husband this dish made its way to his top ten and my son praised this several times. I hope you try this out!

Tuorejuusto-brownie (16 palaa)

Brownie-pohja:
100g voita
300g tummaa suklaata
200g sokeria
2 isoa munaa
0,5tl suolaa
2tl vaniljauutetta (tai -sokeria)
1dl maustamatonta jogurttia
100g jauhoja

Tuorejuustokerros:
225g maustamatonta tuorejuustoa (huoneenlämpöisenä)
1 iso muna
0,75dl sokeria
2rkl maustamatonta jogurttia
2tl vaniljauutetta (tai -sokeria)

Lämmitä uuni 165C ja vuoraa 20x20cm vuoka leivinpaperilla.

Sulata voi ja 200g suklaasta kattilassa tai mikrossa. Lisää joukkoon sokeri, munat, suola, vaniljauute ja maustamaton jogurtti. Rouhi loppu suklaa ja lisää joukkoon. Kaada 2/3 brownie-taikinasta vuokaan.

We call this treat the due date cake. It's outrageous enough to numb the feeling of exhaustion you have after being pregnant for 40 weeks and baby showing no signs of ending the nine month long misery. Unfortunately me and my sisters know quite a lot about it.

Cream cheese brownie (makes 16)

Brownie base:
100g butter
300g dark chocolate
200g sugar
2 large eggs
0,5tl salt
2tsp vanilla extract (or vanilla sugar)
1dl plain yogurt
100g flour

Cream cheese layer:
225g cream cheese (at room temperature)
1 large egg
0,75dl sugar
2tbsp plain yogurt
2tsp vanilla extract (or vanilla sugar)

Preheat oven to 165C (325F). Line an 8x8 inch (20x20cm) pan with parchment paper.

Melt the butter and 200g of dark chocolate in a microwave or in a pan. Add the sugar, eggs, salt, vanilla extract and plain yogurt. Chop the remaining chocolate and add to the dough. Spread 2/3 of the brownie dough into the pan.

Mix together the cream cheese, egg, sugar, yogurt and vanilla. Pour the cream cheese mixture on top of the brownie dough. Top with the remaining brownie dough. Swirl with a knife to create a marble effect.

Bake for approximately 50-60 minutes (the cake should still be a bit wobbly in the centre). Let the cake cool completely and then remove from pan. Cut in 16 pieces. I prefer this to sit in the fridge for quite a while before enjoying it with a tall glass of cold milk!

.. Kuvia käsitellessäni huomasin, että toi mitä käytin on muuten oreganoa eikä timjamia:D Eli hyvin toimi oreganollakin, mutta ens kerralla pistän kyllä ihan ohjeen mukaan timjamia!

Sipuli-luumupiirakka (8-10 annosta)

TAIKINA
3,5dl spelttijauhoja
1tl leivinjauhetta
0,5tl suolaa
150g voita
0,5dl turkkilaista jogurttia

TÄYTE:
500g sipulia
2rkl voita
2rkl oliiviöljyä
400g luumuja
0,25dl juoksevaa hunajaa
1-2rkl tuoretta timjamia silputtuna
1tl suolaa
0,25tl mustapippuria myllystä
2dl kuohukermaa
2 munaa
150g vahvaa goudaa raastettuna

Valmista pohja.

Pilko sipuli ohuiksi lohkoiksi.

I usually never try out anything "weird". I can test a new brownie or cookie recipe anytime, but rarely do I make anything exotic or wild combinations. Yesterday I received the newest "Maku" food magazine and there was this one recipe that caught my eye and I just really wanted to try it out. An onion plum pie! Onion and plum. Okay...

This one is sure to divide opinions but it definitely convinced me so I want to share it with you. I was so pleased with it I even had the courage to serve it in a get-together last night and there wasn't a single piece left at the end of the evening. So if you're in the mood for something different, I can sincerely recommend this one!

.. As I was editing the photos I noticed that I accidentally used oregano instead of thyme:D It was good with oregano as well, but next time thyme it is.

Onion plum pie (8-10 servings)

CRUST:
3,5dl spelt flour
1tsp baking powder
0,5tsp salt
150g butter
0,5dl Turkish yogurt

FILLING:
500g yellow onions
2tbsp butter
2tbsp olive oil
400g plums
0,25dl runny honey
1-2tbsp fresh thyme chopped
1tsp salt
0,25tsp freshly ground black pepper
2dl double cream
2 eggs
150g strong gouda grated

Prepare the crust. Combine the dry ingredients and cut in the butter until mixture resembles coarse crumbs. Stir in the Turkish yoghurt until mixture forms a ball. Wrap the dough ball in cling wrap and let it rest in the fridge while you prepare the filling.

Cut the onions in thin slices. Heat the butter and olive oil on a pan and saute the onions until fragrant. Rinse the plums and remove the stones. Cube the plums and toss them into the pan with the onions. Saute for two minutes and add the honey. Let the onions and plums simmer at medium heat under a lid for about 10 minutes, until the onions and plums have softened. Season thyme, salt and pepper.

Roll out the dough onto a 25cm pie form and press it onto the bottom and sides of the dish. Spread the filling onto the crust. Mix together the eggs, double cream and 1/3 of the grated gouda and pour the mixture over the filling. Sprinkle with the remaining cheese.

Bake the pie in 200C (392F) oven for approximately 30 minutes, until the filling has set and has a nice golden brown colour. Let the pie rest for a while before serving. You can also make this beforehand and let it wait in the fridge.
